Got the Wok Hot Tonight

Pretty standard wokking adventure but it’s been a while since I’ve posted a stir fry.
Gettin the egg hot

Hit the beef with a little Chinese vinegar, white pepper and cornstarch. Into a hot wok

Next added in the shrooms, garlic and ginger

Sauce goes in for a bubble

Then the green onion tops

And ready to eat

Total cook time from walking out to the egg to ready to easy 6mins. Time from firing egg to eat was 25mins.

Nice! I need to do more of that. Don't remember the last time I used my wok.
You don't add oil to the hot wok before adding the food? You didn't list it and I didn't see any. Just curious.I hate it when I go to the kitchen for food and all I find are ingredients!

I don’t use a lot of oil on my protein. There was some safflower oil in the initial stage but the meat soaked it up quick. I added a little more when the garlic, ginger and shrooms went in. The shrooms create some liquid as well.

Nicely done. I was thinking the other day that I needed to do a stir fry myself. I use the wok a lot but at lower temps more as a skillet. High heat wok cooks are fun.Thanks for making us all hungry.Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

2 1/2 – 3 TB tamari soy
1 1/2 TB agave nectar
1 tsp Chinese rice wine or dry sherry
2 TB water*

I love seeing wok posts and yours is no different. I'm sure my first attempt will not be near as smooth as yours, but practice makes perfect. Delicious looking food, btw.It's "Smokin Gal", not "Smoking Al".

It is carbon steel from CGS. You’ll have to season it yourself but that’s no big deal.
