Going apple picking and need simple/quick ideas for dessert

Going apple picking in this morning, and this afternoon going over my buddy’s who got his first egg (used xl) earlier this week. I walked him through the setup for ribs, so those are going on at 9 am. We should be getting there about 1-2 PM where we are going to cook a bunch of things different ways as a crash course on using the egg over a few hours. Was thinking of making a quick and easy dessert on the egg with the apples we pick this morning.
One idea I had was to core out an apple, but not all the way through, bake it for about 10 mins, then add in butter, brown sugar and cinnamon into the “core” and bake another 10 or so. So apple pie without dough....
Need simple and quick ideas using common ingredients. I would like simple so the fresh crisp apples stand out. Not sure if I have any time to go shopping at this point....
I would like to hear what you would do and any ideas you might have.

Not super quick, but Apple crisp is always a hit. And it uses a brown sugar/cinnamon/butter crumble as opposed to pie crustDFW - 1 LGBE & Happy to Adopt More...

Ellijay GA with a Medium & MiniMax
Well, I married me a wife, she's been trouble all my life,
Run me out in the cold rain and snow -
CRUST
- 2 cups King Arthur Unbleached All-Purpose Flour
- 3/4 teaspoon salt
- 2 tablespoons buttermilk powder, optional
- 1/2 cup cream cheese (low-fat is fine)
- 10 tablespoons cold butter
- 3 to 4 tablespoons ice water
FILLING
- 1/2 cup Baker's Cinnamon Filling mixed with 2 tablespoons water*
- 3 medium-to-large fresh apples, peeled, cored, and thinly sliced
- dash of salt
- 2 teaspoons lemon juice
- 2 tablespoons butter, cut in small cubes
- *Substitute 1/2 cup granulated sugar and 2 teaspoons ground cinnamon for the Baker's Cinnamon Filling and water, if desired. If you use sugar and cinnamon, DO NOT ADD THE WATER.
TOPPING
- 2 tablespoons coarse sparkling white sugar
