stuffed pork tenderloin first attempt
This is a cook from a little bit back. I got to the store and wanted to try something new. I got on the forum and just looked at what y'all were talking about and the stuffed pork tenderloin caught my eye.
The above picture makes me think of that old movie with Kevin Bacon, Tremors lol.
Stuffed with mushrooms, goat cheese and spinach. I over cooked the pork a little bit it wasn't bad. This will be something I'll continue to play around with. There seems to be a wide range of cook times/temps on this one which I'm sure will allow me to play around with this a bit. Sorry for the fuzzy pics

Smoking in Aiken South Carolina -
I did my 1st smoked tenderloin that was store brought, bacon wrapped with 3 cheese stuffing . . . one of these days I'll try to do my own . . . always afraid of not slicing it into a roll

Mine came in 2 pieces so I had to flatten em and tie them together lol
