APL Honey-Glazed Spatchcocked Chicken

I decided to try a new recipe from APLs Serious Barbecue: Honey-Glazed Spatchcocked Chicken. This was my first time flipping a bird (heh) while spatchcocking it. I have to say, the skin came out crispier and more well-browned this way. I'll have to think about doing this next time.
Question for the forum: if you (or your guests) don't like chicken skin, is spatchcock chicken somewhat devalued as a preparation method? I ask because one of mine didn't eat any and I wondered if all the effort seasoning, basting, and glazing the chicken is mostly lost with the skin.

One breast served with red potato, hatch chiles, and sour cream.

Compound butter and glaze. The bird in the back is looking nice!

Switched places. You can see the potatoes underneath.

Compound butter as a board sauce.

Final bird. One of the legs nearly fell off as I removed it from the grill.

Stats please? If we’re talking <30% of the guests, then I don’t worry about. If they are close friends/family then I might accommodate.
Otherwise, it’s a potluck and you bring what you want to eat and share.

Just my own personal policy, and I’ve been called a jacka$$ before.
If said person is a first degree family member, then yes it does behoove you to make accommodations. Maybe throw on a skinless leg quarter for them and give it the same treatment as the rest of the skin-on chix, for example.
All others should be evaluated on a case by case basis
