Chicken and potatoes

after my chicken fail last week (beast meat too tough). I am trying a Spatchcock organic chicken (as recommended by the book “The Food Lab” - an Amazing book). Just salt and pepper cooking at 450. Pulling when beast meat reaches 155-158, let ready and I hope to enjoy... I am also doing potatoes because why NOT!!!

I find 400 degrees for ~60 min raised direct is the perfect bird.XLBGE, LBGE, Charbroil Gas Grill, Weber Q200, Old Weber Kettle, Rectec RT-B380, Yeti 65, Yeti Hopper 20, RTIC 20, RTIC 20 Soft Side - Too many drinkware vessels to mention.

Just Vote- What if you could choose "none of the above" on an election ballot? Millions of Americans do just that, in effect, by not voting. The result in 2016: "Nobody" won more counties, more states, and more electoral votes than either candidate for president. -
Looking good! Just to throw out a suggestion...if you have a way to set up a second level try cooking the chicken over the potatoes sometime.
One more suggestion is to rotate that bird legs to the back (although I may be a little late for this cook on that!).Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -

Finished Bird was very moist, nice texture and great flavor. Happy with this bird!
