Chicken and potatoes

after my chicken fail last week (beast meat too tough). I am trying a Spatchcock organic chicken (as recommended by the book “The Food Lab” - an Amazing book). Just salt and pepper cooking at 450. Pulling when beast meat reaches 155-158, let ready and I hope to enjoy... I am also doing potatoes because why NOT!!!
