So I’m flying solo today!!! SRF all the way!!!

So today, I’m flying solo! Cooking 8 1/2 pounds of beef ribs from SRF!!! Feeling a little apprehensive as I don’t think I’m going to wrap them at all. So far I’m just a few hrs in but they are coming along nicely...here are a few photos of the progress.

I just did my first rack of those SRF plate ribs a couple of weeks ago. They weighed in at 8.7 lbs. Pulled the membrane and seasoned 'em up. Ran around 260-280*F on the dome and took around 7 hrs total. Did wrap in BP at about the 5 hr mark. Toothpick for the win. The meat will dang near roll off the bone. True brisket on a stick.Trust the process. You are in for quite a treat.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

You are able to lift 8+ lbs of meat and the egg dome as well!! That's great news! Progress!!
I hate it when I go to the kitchen for food and all I find are ingredients!
