Can't be sous vide for the duration as it has a crust. Same for blanch. So that leaves reverse sear or T-Rex. But I won't further guess as you clearly meant for the first options to be seriously considered.
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

Sous Vide. 131 for 3 hours, seared 1 minute per side, rotate, repeat. I love all the passion for all the methods, this was just the right choice for me today...

In other words more than sous vide was involved in the process. See above-Edit: Clarity of language would eliminate a whole lot of issues.

I was gonna say SV then sear just based off that jelly looking fat. Looks great.
I did did the same thing tonight with 2 ribeyes. Grandkids here for the night and they were hungry so no pics.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky. -
My guess was excellently.LBGE, and just enough knowledge and gadgets to be dangerous .
