I actually did a solo cook....SRF Pork is amazing

so tonight I had a half full/empty bag of ROCKWOOD charcoal and was able/given permission to lift the lid on my small grill by myself....huge for me! So I cooked an SRF pork collar!!!!!! It was so good. The cook wasn’t without flaws as I overshoot my temps on the grill and the pork...but it worked out in the end. I am convinced that this is a new favorite cook! Here are a few photos of the adventure/ finished product. Thanks for taking a look, and if you have experience with this cut let me know how you’ve cooked it in the past.

Looks awesome. I’ve never had pork collar. Can you explain the taste difference vs a pork chop?

@Daddyshack it had more of a ham like texture to it. There seemed to be more intramuscular fat than a standard chop. The pork flavor was a little stronger than what you generally find, not positive if that was the cut or the breed of hog.XL BGE, KJ classic, Joe Jr, UDS x2
