Sriracha Ribeyes

Been a while since I posted.  If you have never added a thin layer of Sriracha onto your steaks (or chops) before cooking, I suggest you do so.  I did these in Dale's Steak Seasoning for about 10 minutes (found at Walmart and it's delicious; used for 25 years or more) and thin brush of the magic stuff.  A little pepper, and a little crust.   These were rare.

    Never tried that stuff, but pick up a bottle of Andria's at schnucks or dierbergs......I have a flank steak marinating in it right now.  Then mix some with some melted butter as a finishing sauce.  Andria's is about the only steakhouse I'll ever go to.  Never been to the Fairview Heights one (the original one), but been to the Edwardsville location many times.

    Great looking steak. Did it still have a kick of heat to it?

    @stlcharcoal Oooh I do like me some Andria's too!

    @CigarCityEgger As long as you just brush it on prior to grilling, it's just a slight chili/pepper taste.  Not spicy necessarily.    If you marinade in it, it's stronger, which isn't normally my preference.

    @stlcharcoal And also, by the way, these were cooked over Rockwood.  The only thing I will buy anymore unless we are in a pinch!  I get mine at Hackman's in Saint Charles.

    Good folks at Hackman.  They carry some of our smoking woods now too.

    About 10 yrs ago my Schnucks had Peter Luger Steak Sauce in the refrigerated meat counter for about a month.  I rarely use steak sauce, but that stuff was pretty damn good......kind of like cocktail sauce and Andrias mixed together.  I believe at the restaurant they don't put it out or have it on the menu--you have to ask for it special.  Wish they would bring it back.
