This reminds me of "The Chicken" described on Naked Whiz's site (http://www.nakedwhiz.com/thechicken.htm).

I've been wanting to try the same method with tandoori or middle eastern marinades

I do it all the time with a skirt steak recipe I got from ATK. Grill the SS hot and fast, then hit it with the Jaccard tenderizer a couple of time and drop in the marinade for about 10 minutes. Finish for a minute per side on the grill...yum.

What am I missing??  Sounds like a new fancy term for adding a sauce to a cooked piece of meat.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

    LOL!

In the naked whiz "The Chicken," the meat kinda steeps in the sauce.

    cook chicken wings
    put chicken wings in bowl
evenly coat chicken wings in a mixture of franks and butter
wait a few minutes while drinking a beer
