Doing a couple 6lb butts for the 4th, serving at noon. Time is not of the essence so I could turbo butt @Mickey style these bad boys or regular slow smoke. What do you guys think?

If I have the time I like the slow cook, just gives me more time to drink and “tend” the cook. But turbo butts are great too, can’t lose

I still only do the turbo butts. I really like to get sleep at night
Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

Last weekend I made two 8+ pound butts for a friend's retirement party. It was cruising along at 290*. I decided to wrap at about 165* and bump temps to cook faster. Somehow a grease fire ignited when I was inside and I got out to a temp dial wrapped above max. Shut vents and put on ceramic cap to snuff the flames. The egg showed a true temp of 500* without the raging flames. I got the egg open after careful burping and the butts were probing great at 198-205*. FTC for a few hours and it pulled a bit stiff, but coaxed along with my cleaver was pretty dam good. After that little episode I will never worry about high "turbo" temps again. I will cook L+S if lounging around and fast if time is an issue and be confident the product will be good either way.

Man you can’t beat an egg. No electronic temperature control needed
