Eye of round

Kroger has "whole eye of round" beef on sale. They are about 5 lb, in cryovac. I suspect not enough fat in them for low and slow, but given the (low) price i imagine it's a pretty tough cut. Anyone have experience with this cut?

    Eye of round will provide great roast beef sandwiches when slow smoked and sliced thin across the grain. Use your favorite rub and smoke at around 250/275 to an internal temp of 135 for med rare. It can be tough but will make great sandwiches sliced paper thin. You will need an electric knife to slice this that thin. Good luck, Tom

    Ken Baker,[p]Local Albertsons had them on sale for 2.99/lb. I got 6. Exactly as Baja states, rub the hell out of them. I like DPs regular Dizzy rub, but anything will work for you that is good on beef. I stick it on a raised grid over, yeah, 250-300 depending on the planets and don't take it ANY over 135. In fact, if you pull at 130 you'll be ok also. I don't use a drip pan because really there isn't enough fat to drip! Wrap it up and let it sit in the fridge so it doesn't continue cooking much and to get easier to slice. This is the perfect cut for the new meat slicer you are getting for xmas! I cut it thin, no more than a 2-2.5 setting on my Chef's Choice (that I LOVE). Put it on a warmed up bagel with mustard and bring it over for EliShark to inhale. He eats them for breakfast sometimes. It sure beats 9.99/lb Boars Head at the deli![p]mShark
