*OT* Sous Vide Cajun-Style Chicken

I have had my SV machine for a couple of years  and have used it to make egg bites, a few steaks and to reheat food.  Today, I took the plunge and tried some breasts.  141 for 3 hours, with a Cajun styled rub.  Seared for two minutes per side in clarified butter. OMG, amazing, moist, perfect.  Put on some shrimp before the chicken...

Out of the bath the breast were unimpressive, but in the end.  Wow!

    Scott, that looks really good! Is it hot/spicy? I have tried several blackening seasoning recipes and they've all been flavorful, but not particularly spicy. Your ingredients are similar to the last blend I tried. Maybe I just need to find a better source for spices.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Looks great. You're inspiring me to break mine out. Got it for Christmas and used it once for steaks and twice to maintain mash temp when making beer. I need to put it to use.

    @Carolina Q As you said, flavorful, but not spicy.  I even added some Dizzy Pig Ghost!  Guess it needs more cayenne.  Plus I didn’t have white pepper...
