Chimichurri Thighs and a Tomato Salad

Marinated some bone in thighs in some fresh Chimichurri for about 2hrs. 2 thighs still had skin as a test to see how they absorbed the flavors
Next up the thighs get seared in the CI for some color and texture
Then slow roasted on the large at 350° raised indirect till they hit 185°
Then plated with a tomato,red onion and butter lettuce salad and a lemon vinaigrette
Flavors were great on both the skin on and skinless thighs and the tomato salad was a great fresh bite of goodness

Great cook and outcome. Love Chimichurri and props for making your own. If you had to choose, skin or skin-less for the flavor win...

@lousubcap - I would have to say bone in skin off would be my favorite. The skin tasted good but to me that’s where the flavor disappointedly disappeared.
