Happy Memorial Day Egg Nerds!
First time ever cooking a rack of short ribs (chuck). 3.5 pounds, 3.5 hours on at 275 over oak. slight dusting of Holy Cow then a heavy layer of S&P. MMMmmmm! Enjoyed the cook with a (sorta) Cohiba Behike and a beer. Served with sweet potato fries and some slaw.
Then meal prep'ed the skinless boneless for the week. And a casualty of BBQ. Happy Summer y'all!

Great post! If you like black pepper forward rub on beef Historic BBQ makes a very good one simply called “Black”. Worth a try IMO. Again, beautiful post.
