48 pounds rollin on the XL

Big day for the XL.   19 pound brisket, trimmed down to nearly 15 unfortunately (Costco kept a ton of fat on this one...) and 33 pounds between 4 pork butts underneath. 

Butts were injected with apple juice and molasses and a combo of BBBR/Brown Sugar rub

Brisket was injected with Meat Church Holy Cow injection - it's amazing.  

Pecan and Cherry wood for smoke and a huge drip pan.  Smells amazing over here! 



*first pic has a small piece of wood under the brisket to help it fit.
