Cooked it with butterball breast roast several times for family and friends, nothing but great results and great great reviews, and really simple.

I did it tonight and thought it sucked. Could’ve been because it was a bird I had frozen because I didn’t use when I bought it. IDK. It hit the foil and butter at 147° The temp never got over 160° at any point but the meat was dry as the Sahara Desert. It was bad enough I won’t try again.
Tell me where I wrong.

I've tried his turkey at Franklin's and I've cooked his recipe (blogged about it here).
I would say it's good (both from his restaurant and what I cooked). I've tried better recipes though.

I do it and it's great. So moist it squishes when you cut it.... My family can't get enough of it... I go exactly by the book, with breast only. I've done it on the Egg and the offset with similar results.

Yep and deboned. It was boneless and skinless.
Your turkey looks awesome. It’s still on on the bone and looks like the skin is on. True?

Actually, I did remove the skin. Always do. It's a great technique. Don't give up on it. Perhaps it was a bad bird?

I make a pair of Turkey breasts once a month. Use the leftovers for sandwiches during the week. Started doing this about a year ago. It has never failed me. I don't use Franklin's method. I use a different Austin, TX recipe.

I’m pretty sure I had a junk turkey. It had been in the freezer for a while. I’ll do a skinless with S&P again but skip the butter step. I know how to cook turkey this one just p!ssed me off.

We get a few turkeys from work each year between the wife and I so some of them stay in the freezer a while. After a good 8 months the quality seems to take a big hit... The breast seems tougher and dryer than it was for thanksgiving when I first received it. Just seems off all around.
