Clean burn, remove thermometer?
I need to do a clean burn this afternoon on my Large, mostly to burn off whatever got on my pizza stone, but also to season a small paella pan I'd purchased. Is it a good idea to remove the thermometer, or will it be okay? Thanks!

I would say it depends on your clean burn temp. If you are going nuclear such that you would wrap the needle then remove. However, you should be able to achieve your clean burn goal in the 500-600*F range so the thermo can stay in place. FWIW-
But as noted by @Legume, recheck the calibration when done.

Take it out. Don't ask how I know. And if you're still using the clip, toss that in the trash while you're at it.

Right. The thermo isn't going anywhere even without the clip. And it's easier to rotate to put your target temp straight up (easy to read from a distance). Also, you're less likely to unintentionally turn the calibration nut.
I guess you might hang onto it for those times when the thermo probe is hitting a large piece of meat. Put the clip on the outside of the dome.

Do your clean burn at 650-700ºF. Use your thermometer to make sure you are at the proper temp. No need to go to out of control temps. It just takes a little longer.

Agreed. Burning at 700° is fine. Unless you aren't paying attention and the burn gets out of hand. Easy to trash a thermo that way.

650°F is as high as you need to go for a clean burn in my experience. But I still recalibrate the thermo after doing one.
Also agree on the clip. Haven't used mine in many years.

Okay, will keep it to 650-700. At that lower temp, I won't have to wheel it out to the front driveway. Someone posted a night-time pic of a "nuclear" burn and the flames went up several feet, don't wanna wreck my expensive vinyl pergola.

^^^ Yeah, that first pic is the one I remember.
Well, the clean burn was a big fat failure. This morning I took all the innards out, cleaned her up and reassembled, and cooked some cheekun; that went okay. Then I put in the pizza stone, the paella pan on top of that, took off the Smobot and opened the bottom all the way. Temp came up to about 450 and no higher. All I can think is I got a wet bag of lump (BGE brand, they were out of Rockwood). The paella pan was a nice tan color, at least.
I cannot figure out what happened to my pizza stone! Think I posted some months ago that I tried an oven bake, and smoke just started rolling off the stone (and it was almost black). Fire alarm went off, and it took two days to clear the smoke out of my house. Well, today smoke was boiling out of my egg during the "clean burn" again, and it smelled like burned motor oil; it still reeks as the temp is coming down (lump's about gone). Think I'm gonna be buying a new pizza stone, I really don't know what happened. And I may have to do another clean burn, sans stone, to clean out the Egg itself; I hope I haven't ruined it.
And I don't think any neighbors will be coming over for food anytime soon, it's a beautiful day with no breeze and I can smell the burned motor oil smell in the front yard, dayam.
