Another Costco mini full packer

I've had this one in the fridge roughly a month, and decided it was time. You can see the cryo's starting to get just a little loose:

This one had so little fat that looked worth trimming, I didn't even bother weighing the little I did trim off it.

    I guess the label may be barely readable...but it started out as 8.88lb.

    I was thinking, being so small, it'd be a fast cook. I started it at 8am thinking it'd be done well before dinner and I'd FTC it for a while. I also figured, being a small/fast one, I'd try not foiling. It's not cooperating. I'd normally be looking at eating about an hour from now :(

    Your cooking temps are lower than I would have used, even for a small brisket, for a same day brisket cook.

    Probe temps, I'm assuming temp at same level as brisket, between 202 and 220 for most of your cook is very low.


    You can always foil wrap the brisket, after a short rest, and hold in a cooler for hours if it finishes early.

    It only took another hour after the above, and came out great. I gave it about an hour FTC'd before slicing.

    BTW...I think this was my second one on the CGS adjustable rig (R&B combo). That thing really does make it a lot easier than the plate setter and worrying about shielding.
