Just a Little Tri- Tip
Picked up some Tri-Tip from Costco yesterday. It is one of my favorite cuts.

Blood on the board is a good sign.
Plated with some cheesy cauliflower once caprese salad.

Now that is a great cook. Congrats. Tri-tip is definitely an easier find well west of the Mississippi.

How do you cook tri-tip? I have been a bit intimidated due to the big end vs small end. Love medium rare beef.

I reverse sear it like any other thick cut steak. Usually 250 until about 125 and then sear it off until about 130-135 and let it rest 10 minutes.

One of my favorite cooks and cuts of beef. Like has been said - for me, the best way to cook them is reverse sear. Many different ways to make them but my favorite is to salt them liberally, heavy on the Carne Crosta rub, then cook them at around 250 with some pecan chunks until an internal temp of 120 or so and then sear them hot and fast. Let rest for 20 minutes or so and dig in.
I met a guy out west where I have my duck hunting shack and have become good friends with him. He raises beef and told me when I first met him that he hates store bought beef as it simply isn't as good as what he can raise. The first night at my place I invited him to supper. I made store bought tri-tip for him. He had never heard of tri-tip and told me he wasn't real hungry (I suspect because he knew it was store bought). After he tried it, let's just say he ate nearly a whole roast.
He is disappointed now when I invite him to supper and I make something other than tri-tip. Heading out this Friday and invited him to supper. His question - "Are you making tri-tip?" Ha!

I like the reverse sear. In my XL its easy to build the fire on one side and put the tritip on the other with the small end farthest from the fire.
I bring mine to 115* then kick up the heat and sear it or pull the grate and go caveman style and drop it on the coals for 30-45 seconds each side, twice.
