Any good recipes for homemade potato au gratin cooked under the ham in the Egg? I’ve hesrd of fellow eggheads doing this in the past and it sounded outstanding.

To me, the whole point of a Potato Au Gratin is the browned crusty top. I would think that's not possible in an egg sitting under a ham. I guess you could pop it under the broiler before serving.

smoke a small ham before hand. some goes in the potatoes, some in the green beans. easter though i do an irish colcannon with ham and kale, easy to time while the ham rests. then the au gratin on its own during the week or the next weekend
