How do you cut this "cut" of meat? Is it like cutting a Flank Steak? (Against the grain)

As above and be sure you note the change up. It is quite a variable depending on the cut. I once had one with not enough grain change to worry about but for most it is definitely discernible at the apex of the protein. FWIW-
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
