Smoked Short Ribs
I made these short ribs this weekend. Whole short ribs rubbed with kosher salt, coarse black pepper, and espresso. Smoked with pecan at 250 for four hours. Much easier than brisket. Will definitely be doing these again.

I love some good beef ribs and those looked great. I just have trouble finding them locally.Morristown TN, LBGE and Mini-Max.

They are worth a deep dive. Suggest speaking to your butcher even if it’s a grocery story butcher. They can surely get them and they will prolly come cyrovac pairs. Beef Plate ribs = goooood! -
I’ve always bought short ribs from the grocery store for braising, but these are from Restaurant Depot. Other than just being larger, they had a ton of meat on them.Came in a 2 pack. They barely fit in my Dutch oven.
