I did a 3 pack of split chicken breasts last night after the whole turkey breast section came off my medium BGE (smoked it). I had plenty of room to cook the ones I did. I also do mine at a bit of a higher temp (grilling) until done. I don't stick a thermometer in the chicken, since I can tell my feel when they're done (similar to how you can tell a steak is done without a thermometer).I have enough left for another meal, plus some smoked chili for another night, so I'll end up doing more on Friday.I get the store brand chicken breasts (Hannaford) that are the lower sodium content version, with rib meat. I season simply. Coat with EVOO, then dust with granulated garlic on all sides and a bit of Spike on the top. The extra flavor I get form the BGE is all it really needs to make it great. I do, occasionally, add some chips to the charcoal to get more smoke flavor into the chicken. But lately I've been skipping that part.Now I'm thinking it might be time to take a filet out of the freezer and grill that up on Friday for dinner.Large BGE with CGS Woo Ring, stone with stainless pan, Smokeware chimney cap, Kick Ash basket and Kick Ash can.Living free in the 603 (Pelham).
