Elk Burger with Porkbelly Burnt ends

Made some PB burnt ends (rich, unctuous and a heavy bite) and have used them in a couple dishes and thought they would be good as a topper on a burger. Kick up the burger and use Elk from a successful hunt in Montana.
Added some caramelized and raw onions along with some Mexican onions and garlic I roasted together.

I love elk. I've had pork belly on top of burgers before and don't really care for it. It's always been more like really thick cut bacon. Interested in how the "burnt ends" worked out for you?Large and Small BGECentral, IL

The couple of times I've tried it the cuts were approx 1.25 inches and seemed to be only hit with a quick sear. The texture and taste just didn't jive with me.SmokeyPitt said:
