I finally found a butcher in Canada that knows what hanger steaks are. I have a case of them coming. I remember a lot of stuff being discussed here a while back but I cant find it in the archives. Can anyone please give me any ideas about preparing them.[p]Thanks[p]Steve

Little Steven, Mad Max did some at EGGtoberfest that were great. Here's what he says he did:[p]Grilled Marinated Hanger Steak

    Eggtoberfest 06
    What you will need
1 Hanger Steak (you need to find a butcher that will get them for you)
    1 shallot
    Soy sauce

1 Take the hanger steak and tenderize it with a jaccard (tool with many sharp pointed blades, or you can simply use a sharp pointed knife)
2 Finely chop shallot. Put steak, chopped shallot, and about 1/3 cup of soy sauce into a plastic zip lock bag. Let marinade for a few hours (all day is fine or 1 hour is ok).
3 Remove from marinade, pat dry, the grill direct at 500 degrees till done (I like it around 130 internal at the thickest part). Remove from egg, let stand a few minutes, then slice thinly down the long side of the steak. Be careful to remove the tough piece of gristle that separate the steak into two halves. • Wise One,[p]Thank you. I was sure there was tenderizing involved,[p]Steve

<p />Little Steven,[p]I have done them several times...but don't see the need to stab'em first![p]Max's marinade is good BTW!![p]HangerSteak6.jpg[p]They're great (cooked rare to med rare)!
Just make sure they're trimmed properly!![p]Enjoy...[p]Evans[p]Max's marinade is gooooood, BTW!![p](I also like to add a touch of brown sugar to it)!

I spent most of my money on good bourbon, and bad women...the rest, I just wasted!!

Wise One,[p]I've actually Egged these 3 times now. (They have become our favorite cut of steak off the egg) We don't tenderize them at all. Just marinate for about 1-2 hours in Dave's Gourmet Soyabi... then sear both sides... turn down the heat and cook for about 10 minutes and done. Ours are trimmed by the butcher, so no grizzly stuff down the middle or veins. [p]De-lish![p]-Jill
  • Chubby,[p] Man do those look amazing. I've never seen them. They look like a giant skirt steak. I can't wait til Monday.[p]Thanks[p]Steve

Just want to say to anyone looking to cook a hanger steak you don’t need to tenderize it it’s one of the most tender steaks I have ever eaten. Probably only gonna find them at a butcher I used to get them at restaurant depot in bulk and spend a couple hours separating them and peeling them. Best comparison I can give is the Costco ribeye cap unrolled but leaner like a filet but still has the beefy flavor.

  • I miss that guy!  What a loss.  We were thinking about going to Niagara Falls this summer and Wilma said “I almost suggested stopping by and taking Steve & Norma out for supper, but then I remembered.”

Yep, this forum has a hole that won’t be filled. Thanks for the reminder- hope his family and friends have found some peace.

I didn’t miss the point I watched the meme pouring out beer multiple times. Never met the guy but seemed like a good guy to have a beer with.

Which is why it had nothing to do with a hangar steak or a meme. You missed the point. But Steven wouldn’t have cared. And Steven probably would have liked you.

I guess but I never met him and my 2 cents doesn’t matter. Just didn’t want someone butchering a good piece of meat in his memory.

I think a lot of people here met him? Am I not the drunkest person on the forum tonight?

I never had the good fortune of meeting him in person, but when I was new to the BGE world he was always there to offer advise and assist.  One thing is for sure this online community was made better because he was here.

We can both agree the forum lost a good person. Didn’t mean to stray from the point just saw what I consider bad cooking advice and didn’t want others to follow it.
