I bought 4 packs of chicken thighs at the store on sale, $1.77/lb, and took them home and vacuum sealed them then got distracted with kids going to bed. It was probably 9 pmish when i finished them up and when i was getting lunch together for work today at 3:30am i noticed they were still on the counter. Are they ok? Do i need to throw them out and start over. the trick is i am serving two packs of them for my daughters birthday next weekend.

You should start a mental clock running from the moment you took them out of the cold section in the grocery store, and the alarm should go off at 2 hours TOTAL. From that moment, whatever time they spent in the store before you checked out, whatever time it took to get them home, whatever time it took to vacuum seal them, etc., until 3:30 AM when I gather you put them in the fridge. It sounds like more than 6 hours. That's way, way too long at room temperature.
It's possible no one will get sick, but there's definitely a real risk they will, and miserably, desperately sick. Children (and elderly) sometimes die from food borne illness. Here's a quote from a health source about the temperature "danger zone":This refers to the range of temperatures at which bacteria can grow - usually between 40° and 140° F (4° and 60° C). For food safety, keep food below or above the "danger zone." Remember the 2-Hour Rule: Discard any perishables (foods that can spoil or become contaminated by bacteria if unrefrigerated) left out at room temperature for longer than two hours. When temperatures are above 90° F (32° C), discard food after one hour.
So 2 hours is the limit. 3 is risky. 6 would be crazy. Just not worth putting yourself and children at real risk. -

Sadly, my distraction was not due to kids, just old age and forgetfulness. -

Chicken thighs were $1.77?! And that was a sale? I thought things were cheaper in the South. Thighs are usually 99¢ a pound here, maybe a little higher.
But yeah, toss 'em. That could be a most unwelcome birthday surprise.I hate it when I go to the kitchen for food and all I find are ingredients!

yeah its a chain called sprouts, they are some decent quality thighs and have great flavor. there are other cheaper options out there but for the quality its hard to beat locally for us. Sprouts does have some good yardbird...but I agree even if you have to go back and pay full price I wouldn't risk it.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

embedded fear about poultry, i would chuck it. i dont have this fear with beef lamb, pork, i would cook it, eat it, and probably leave it out over night again after cooking and finish the leftovers. i do know the safety rules but i do that anyways. a few years ago you could leave food out for 4 hours, in my mind it was probably safe for 8 hours safety wise
then they changed it to 2 hours, in my mind its still 8 hours

My wife and I not once but 3 times put left over Pork Loin in the Microwave while we were eating to keep it safe and completely forgot in a range of overnight to a day or two.
