If worried about the blade at Costco, buy flank, filets, or primals

Costco blade worried me for about 3 minutes. The size of Costco and their commitment to quality makes me fairly confident they did a safety analysis and the blade tenderizing did not appreciably add to the risk of poisoning their customers.

Re-gasketing the USA one yard at a time -
I typically buy most of my meat at Costco. Overall, I'm happy with the quality and value for money.
I use our local butcher on occasion (they've been around since 1957 and family still owns/runs it).
They are top-drawer with quality. I bought a prime rib a couple of weeks from our butcher and it was good.

@BGEChicago Where do you live in Chicago? If it's not to far of a drive go to Al's Market in Wilmette. Joe is the butcher there he always has dry aged prime beef and beer on tap in the cooler.

Place close by, Striplings. They are trying real hard to be local and fresh. I’ll admit I do enjoy their meats. Very good and can custom as you desire... comes with a cost.. best butts around by far. It’s ashame these places are rare... shooting the bull with locals is way better than Facebook any day....You can’t get to Loganville, Ga from anywhere. You have to start somewhere else

Also a bit of a drive, but Peoria Packing and the Butcher & Larder are rated some of the best in the country. I've visited the Paulina market a few times. Their meat looked great, but $$. I went for the sausage. They have about 100 varieties. A fellow who opened a shop not far from where I live worked at the Publican for awhile. He was laid up after a surgery, and the Publican let him sell their sausages. Definitely top class.

Humberts is one of our favorites. Their marinated Tri Tips, Cube Steaks, etc are very good. We do a lot of shopping at Findlay Market-I very rarely buy meat from Krogers anymore. The local butchers at Findlay do an awesome job-no need to go anywhere else. Agree, we are spoiled in Cincy!YEMTrey said:I'm spoiled here in Cincy. ton of good butchers around me as well. most make there own version of corned beef, one i go to just for the marinaded lamb rib tips which is something you never see. one cross cuts the shortribs and served med/rare is better than a costco ribeye, pretty much my favorite piece of meat. one serves hot meat pies and scotch eggs every morning which draws a crowd.they dont have this at costco
