If worried about the blade at Costco, buy flank, filets, or primals

Costco blade worried me for about 3 minutes.  The size of Costco and their commitment to quality makes me fairly confident they did a safety analysis and the blade tenderizing did not appreciably add to the risk of poisoning their customers.

I would say try looking around more. Not sure how close to the city you are but I've seen some nice stuff at the farmers market in Lincoln Park. My local butcher has quality stuff at a fair price here in Peoria .
I like Lindy's in Washington.  Bob, the owners brother is the butcher.  Great meat, especially their pork (if they are still carrying berkshire).
Thanks for the opinion from nearly 2k miles away! BTW Bob and his son took my BGE cooking class when they were in the process of trying to decide to become a BGE dealer or not.

Honestly I didn't know they sold Berkshire pork. I'll be going over to check soon!

  • I typically buy most of my meat at Costco. Overall, I'm happy with the quality and value for money.

I use our local butcher  on occasion (they've been around since 1957 and family still owns/runs it).

They are top-drawer with quality. I bought a prime rib a couple of weeks from our butcher and it was good.

@BGEChicago Where do you live in Chicago? If it's not to far of a drive go to Al's Market in Wilmette.  Joe is the butcher there he always has dry aged prime beef and beer on tap in the cooler.

Place close by, Striplings. They are trying real hard to be local and fresh. I’ll admit I do enjoy their meats. Very good and can custom as you desire... comes with a cost.. best butts around by far. It’s ashame these places are rare... shooting the bull with locals is way better than Facebook any day....
You can’t get to Loganville, Ga from anywhere. You have to start somewhere else

A lawyer's dog, runs around town unleashed, heads for a butcher shop and steals a roast. An angry butcher goes to the lawyer's office and politely asks, "If a dog running unleashed steals a piece of meat from my store, do I have a right to demand payment for the meat from the dog's owner?" The lawyer smiles and answers, "Absolutely." "Then you owe me $8.50. Your dog was unleashed and stole a roast from me today." The lawyer, without a word, writes the butcher a check for $8.50. The butcher, having a feeling of satisfaction, leaves. Three days later, the butcher finds a bill from the lawyer: $100 due for a consultation.

All the Lowell "The Hammer" Stanley legal ads I see on tv say a consultation is free. I wouldn't pay the $100.

Also a bit of a drive, but Peoria Packing and the Butcher & Larder are rated some of the best in the country. I've visited the Paulina market a few times. Their meat looked great, but $$. I went for the sausage. They have about 100 varieties. A fellow who opened a shop not far from where I live worked at the Publican for awhile. He was laid up after a surgery, and the Publican let him sell their sausages. Definitely top class.

I'm spoiled here in Cincy.  Still seems like every neighborhood has a butcher shop.  And we have some gems too.  Some are still in operation from the late 1800's and early 1900's.  I have a Costco membership and will buy some meat there.  However, there is something different about walking into Avril Bleh meat market or Humbert's that is special.  Not to forget these places are deli's as well and it's a wonderful experience.  They'll always have something different, you'll see your neighbors there, and it's regularly very high quality meat.  I couldn't imagine living anywhere without some really nice high end butchers.
Humberts is one of our favorites. Their marinated Tri Tips, Cube Steaks, etc are very good. We do a lot of shopping at Findlay Market-I very rarely buy meat from Krogers anymore. The local butchers at Findlay do an awesome job-no need to go anywhere else. Agree, we are spoiled in Cincy!

Appel Valley south of Lancaster, PA is outstanding! Small family run business. They are open Thurs, Fri & Sat only. Good selection, will custom order and cut for you and the smoked products are great.

ton of good butchers around me as well. most make there own version of corned beef,  one i go to just for the marinaded lamb rib tips which is something you never see. one cross cuts the shortribs and served med/rare is better than a costco ribeye, pretty much my favorite piece of meat. one serves hot meat pies and scotch eggs every morning which draws a crowd.

they dont have this at costco

Go 3 blocks south and 8 blocks west and it gets real interesting. I had apartment buildings there.... I hired off duty Chicago cops to escort me to pick up the rent.   Lawndale was the neighborhood, what was I thinking.....
