    Thanks. I used peanut oil and it was a bit hotter than I wanted....it was up around 450 and I brought it down as I cooked 
    I'm in Fredericksburg, VA, and I have an XL and a medium.

    @Skrullb couple comments. First, that's some beautiful wok action. Wow.  Second, I'm down in Richmond and fish out of Deltaville near where I have a man cave cottage.  Where do you fish from?  I know how to catch rockfish but have yet to land a cobia without a guide. 
    Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.

    I fish anywhere where I can, man. I grew up bass fishing the Potomac River, but you name it....
    The Cobia was with a guide out of Va Beach last August, and that was an awesome trip! I live in Ladysmith now, about 30 minutes north of Richmond
