Costco Ribeyes

Options
Normally my meat purchases at Costco are brisket, chuckies, ribs and chicken.  Have been out of Ribeyes for a while so grabbed some the other night and did a reverse sear on 2 last night.  Did a little different though- put them on the AR 3 inches up from the iron grate at 350 till they got to 105 then pulled them off, then took out the top grate.  Left lid open to get heat up and then seared.   Really hit the spot and were very tender !   Enjoy..
