Smobot Overnight Brisket

Smobot was delivered Friday and I was anxious to put it into service! Quick and easy assembly to the daisy wheel. iOS app downloaded and connected to WiFi.


Picked up a prime packer from Costco, trimmed and rubbed with Meatchurch Holy Cow and threw back in the fridge.


Set the egg up for indirect with a water pan. Rockwood and apple wood chunks. Set Smobot to 235 and brought up to temp. This took about 30 min or so and left the dome temp around 275.
It was about 1130 last night when I put the meat on. Went to sleep soon after with a few alarms set on the app.... never an issue. Slept through the night - added more Rockwood and wrapped in butcher paper around 10am (165IT).
Pulled brisket off after 16 hrs (IT198).


Pretty barky but still super moist and juicy! Corners and couple thin spots on flat were a little dried out, guessing somewhat normal.
Verdict on the Smobot... two thumbs up! Really enjoyed the uninterrupted sleep on an overnight cook. Looking forward to using it more often.

Where do you guys clip your pit thermometers? The grate or the bge probe?South of Columbus, Ohio.
