Jalapeno Cornbread
2 Cups of self rising cornmeal
3 Tablespoons sugar2 Eggs
1/3 cup oil
1 16oz can of cream corn
1 cup cheddar cheese
Jalapeno peppers to taste – finely diced
1/2 cup onions – finely diced
Milk
Mix ingredients (except the milk) thoroughly. Add enough milk to make the mix the consistency of pancake batter. Bake at 400* until done. Once a knife or fork comes out clean, the cornbread is done. Let cool and serve with fresh butter. I cook indirect on the egg at 400, takes about 20 to 25 minutes in a cast iron cornbread divided skillet.

You are welcome. The recipe is off the other forum, I think from Crimsongator. It is very moist as far as cornbreads go. I think it is the creamed corn. And nice to have real corn in cornbread. Definitely my go to cornbread recipe.pasoegg said:I'm in...thank you so much!! -

Yes, wish I had made it up. Came from Cooks Illustrated. And this recipe has lemon juice in stuffing so have the rind already. The other trick is small opening slit, big stuffing pocket. Insert paring knife straight in, and then pivot it at the slit to move the tip and create 1/2 the pocket, then flip knife and cut other half of pocket, keeping the slit opening small. Slit needs to be about 2 fingers wide only--being the 2 fingers you use to stuff it. lol. And your lemon rind wedge will fill that size slit.caliking said:Genius way to keep the stuffing in.
