Rib roast and deviled eggs

Good day on the egg! Did smoked deviled eggs then an 8lb rib roast. Ran 250° for 3 hours to 120° then pulled the platesetter and seared at 500 or so. Yes, I ran out of foil. 😂

  • Tell us more about the smoked eggs. The ones I have done darken up.

    Usually mine only brown or get rubbery when I have too much smoke. I boil them, peel them, half them and leave the yolks in, smoke at 100° checking around 30 mins to ensure they aren’t browning. If they’re still white then I’ll go another 10 mins or so.

    Also - it’s been much easier to have them stay white since I’ve been using the FlameBoss. I just set it at 100°.

    Thanks, I use a pellet tray and go about 45 to 1 hour. I think I will cut down the time some and see how they taste.
