Brisket cook time

Hi all,[p] This is my first brisket cook and I have a few questions...Does a brisket have about the same cook time per pound as pork butt when cooking it indirect, low n slow? Also, does it hit the same 170-180 plateau like the pork butt does? [p] 9lb brisket, large egg, cooking at 250 for 5 1/2hrs so far and the internal temp is 170. [p]I'v been working in the backyard smelling it cook all day and can't wait to tear into it![p]Thanks

At this stage you should take it out and wrap in a double layer of foil and put back in the egg.When it rewaches 200 remove and dlet it rest for an hour.

darnoc,[p] Thanks, breaking out the foil now. What happens if you don't foil it and let it hit 200 before pulling it off and putting it in cooler, does it dry it out?[p]DannyV

Tough call.Foil will keep moisture in the beef.Your temp was a tad low for the time of your cook.I would think egg temp around 275 for a short cook.This is where your thermo can come in handy.Your cook is a close call,but the foil will help it to stay moist.I would say keep it in the foil for 1 hour insted of 30 min.

darnoc,[p] opps, should have said 275 instead of 250. It's been bouncing between 275 and 300, typo must have had something to do with the new beer I'm trying today. :-)[p] Internal temps at 190 right now.[p]Thanks!

Double wrap that puppy in foil and let it rest for 30/40 min.Slice and serve.
