Looks Like a Great Christmas
I went into Restaurant Depot to see if I could sign up. I have a side business doing CAD design but I told them I develop recipes. They looked at me funny and gave me a membership. From there, I felt obligated to buy a brisket. Christmas started out at doing only a Maple Bourbon ham but has turned into a few pies (made last night), a brisket packer, ham, ciabatta bread and a braided loaf. So far, so good.
So where did I put my coffee, I will be consuming a lot today :-)

Thanks, being in the frozen north, I want a snow free egging option. I had a smaller egg area with just a roof. Over the summer, I built the new area. I'm trying some lattice to keep the snow out. So far, so good.Big Lake, Minnesota

Brisket at 170. I separate the point and flat so I can trim all of the hard fat out and I can pull each of them individually as they finish. Now wrapped in butcher paper till the finish.

I have 20 minutes to go and brisket is at 195. With it being wrapped, I upped the temp to 340 for the last hour+. Looks like I will be a bit late.
