Advice on smoking sausage

I need some advice before I make a mess of a friend's family sausage making get-together.[p]I plan to hot smoke the sausage rings (beef & pork) at 180* to an internal of 160* followed by an ice bath. Anyone use a lower temp?[p]If I cooked just a couple of rings I wouldn’t care how long it takes, but I’ll have a lot of sausage to smoke so time and space is important. With that in mind, about how long should a ring take (4-6 hrs?) and how many can you stuff into your egg?

Do you use a cure, and (last question) although I don't know what seasoning they'll use, what wood flavor would you recommend?[p]Thanks,[p]KbJ

    Keyboard Jack,[p]It depends on what you are trying to do...if you cure or tender quick you will make a summer sausage...[p]What type of sausage are you trying to make??[p]I make salami all of the time...and I use pecan wood and I load up the grate..just make sure that the meat isn't touching each other...[p]

    <p />Keyboard Jack,[p]Sounds like you are making something similar to a Kielbasa. I rigged up my first sausage rack like this using stainless rod and alligator clips.[p]Although not necessary, adding a curing agent does give you a different texture and of course color. Some of the purists also do a pre-cure before stuffing. You can read some discussion about that here:[p]http://www.thesmokering.com/forum/viewtopic.php?t=1497[p]Click on the link below to check out Dave's Kielbasa. It does not use a pre-cure. I have made ones similar to this with success. It is hard to get the temps as low as 80° in your Egg, so just start off as low as you can. Those low temps are really to help dry the casing, so let yours air dry before going on the Egg, even using a hair dryer if you wish. If you have a grate extender, maybe you can cook a few rings on it with a water/ice bath below it on the main grate. Or if you haven't stuffed it yet, coils (even bigger than this one), may work better for you than rings.[p]07c12b71.jpg[p]How about a follow up post to let us know how it turned out?
