Since Im making the turkey, as I always do, I will be up at 5:50 to get everything going. Im looking forward to a morning drink or 5 and a long day of egging. Ill post pictures of everything as it happens tomorrow. Basic game plan, 20 pound bird brined and currently drying out in the fridge. Ill rub it and butter it tomorrow and get it on the egg by 7.

I cheated and did mine on Wednesday afternoon, and deboned and put in roaster pan. Will re-heat with some chicken stock and serve on Thursday at noon and no one will know the difference!

Good luck, y’all. My 11.5# organic Whole Foods Amazon Prime deal has been in the dry brine since 5pm Tuesday. Looked at it yesterday to test fit in the Egg. Very little liquid in the pan. Hoping it’s all retained in the bird.
