Korean style tacos

Got some beef short rib cutlets dry marinading in Dizzy Pig Peking. Got some “cowboy kimchi “ and some Trader Joe’s Korean BBQ sauce ready for later. Will cut up some cabbage, carrots, and jalapeño into matchsticks for garnish. To be continued......

No avocado for me. Wife and kids like the avocado on everything. I went raw cabbage, carrot, jalapeño , spicy corn relish and cowboy kimchi. I’m sure it’s far from anything traditional but good non the less. Choice of corn or flour tortillas -

A rarity for me, as I like most of the trader Joe stuff, but I didn't like their KoreanBBQ sauce. I tossed my bottle in the trash. Their siracha BBQ sauce however is one of my favorites

I like it. I just used the rub, grilled them and basted them with the sauce in both sides quickly on the grill. Once that’s done it’s inside to remove the meat from the bones and serve. Don’t use anymore sauce other than that, but the flavor profile of the sauce is definitely Korean. I bought the stuf specifically for this dish.
