Frozen Burger

I have always been told you can not/should not make hamburgers from frozen ground beef. What say you?

I think they taste better when the meat hasn't been frozen, but I buy large packages of hamburg and make up and freeze my own burgers, then defrost and cook.

I buy 3 lb packages (or so) of ground beef and portion it out (to meatballs of whatever size burgers I plan to cook). Then, I defrost one of the meatballs and cook a smashburger.
Is it better if I don't freeze? Never really noticed a difference.I hate it when I go to the kitchen for food and all I find are ingredients!

Typically I would freeze in plastic wrap and then after frozen I would unwrap and freeze in the vacuum bag. I also sometimes cook several burgers extra, undercook them and then freeze using the above method.

I think the flavor is fine, but fresh ground will make a looser texture imo.

My issue with frozen is getting the patty to hold together without some extra moisture or an egg. Flavor is fine either way but, the frozen have more tendency to break apart.Greensboro, NC
