Have these bad boys on tap for tomorrow. Will be my first time cooking dinosaur ribs so wish me luck. Picked them up at RD. Almost 12 pounds at $6.61/pound.

Hope you have some help in the consumption area. Just go with the toothpick test for the win-fool proof. Don't forget to remove the membrane.Enjoy the cook and follow-on eats. I would start checking at the 5 + hr mark (if running 260-180*F on the calibrated dome) but as noted by @pgprescott they will likely take longer. Trust the tooth-pick.

Nice looking score there, enjoy. I really should check out Restaurant Depot. Seems like you guys find some decent slabs of meat there. My last short plate rib cook went for 9+ hours, however, I cooked them around 235-240F. Surprised they went that long as they were American Waygu and right under 4 lbs after trimming.It's "Smokin Gal", not "Smoking Al".
