Spider

I own a PSWOO2 with D grate extender. Works kickash for reverse searing. I know a Spider can be added in the mix and was wondering how that would aid the searing part of a reverse sear? Can you sear at lower temps like 500° instead of waiting to get up into the 6-700s?

    Searing is best done with intense radiant heat - meat close to fully engaged coals.  Air temp up in the dome isn't really important other than a rough indicator that your coals are fully burning.  A Spider allows you to get the meat close to the coals to get maximum radiant heat.

    I usually pull the woo and sear at ring height but with a spider I could already have a grate heating up below the woo. 
  • Doing this right now. These tri tips are getting up to about 120 before I put them on a CI grid from a small egg sitting in the spider below. The grid will be super hot when the tri tips are ready for the sear.

    So I replaced the bottom half of my egg under warranty. My adjustable rig and spider are about 5 years old and I noticed the old spider doesn’t quite fit right with the new fire ring. If you get a spider make sure you get the right one for your egg.

    Delicious looking sear going on there. My eggs got the 3 notch fire ring so I’ll get the 3 leg spider. Definitely thinking i’m going to go with the cast iron grate. Is that the 13” cast iron one CGS sells on their website?

    Does the spider get much lower than the woo?  On my XL woo, the holder for the ceramic heat deflector is pretty low, just barely over the coals.    Maybe on an XL the spider isn't needed in addition to the woo because the base is so shallow?

  • @powak, the CI grid in the picture is from a small big green egg.

    @GoooDawgs, the spider drops the grid about an inch into the fire ring.  I have woo's on my XL eggs so I am not sure how the spider for the xl is from a comparison point of view.  It looks like it would give the same drop.  They are redundant compared to the woo drop.  In fact I dont think they would work together.

    You can also put a CI grid right on the coals for the sear portion of the program.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I do the same thing with mine Carolina Q. If the goal is to get the grate closer to the coals, why not forgo the spider and just place it directly on the heat source.

    With all this discussion about the CGS Spider I haven't seen a mention about using it when cooking on a BGE with a round bottom wok!

    I get my egg up to temp with my spider in place with legs down and then close my bottom vent, insert the wok and it too will get hot FAST and I can wok my meal very quickly. OTOH if you want a really hot wok put the spider in with legs up.
     
    If a person buys a spider for no other reason than woking it is worth it!!!
