“Fried” Chicken with spiced honey

tonight I wanted to try something different with our chicken legs......I wasn’t feeling the typical grilled or smoked legs so why not fry it. So I did a triple dip, first in seasoned flour, then egg wash then in a wet batter.
The seasoning included a little Peruvianish from dizzy pig, salt pepper and just a little ghost pepper powder.
The wet mix was exactly the same, but I used seltzer lime seltzer water instead of beer.
Cooked the chicken at 400ish until it was 200°. The chicken was then drizzled with spiced honey.
Spiced honey included a little chil power a touch of soy, and some salt.
All in all the chicken was very good, actually fairly crispy. I think will try doing this again when I’m not eating my Whole food plant-based diet.

Norah and I had a ton of fun cooking chicken in a new way, we love to experiment with new cooking techniques and seasonings.

@EggbertGreenII it was just cooked indirect high in the dome....thus the “fried” part. It reminded me of oven fry from when I was a kid, just a much better tasting version.XL BGE, KJ classic, Joe Jr, UDS x2

That’s looks real good! Quick question, was the skin rubbery or crispy? If it wasn’t rubbery did you dry the skin in the refrigerator over night?Everyday is Saturday and tomorrow is always Sunday.

@510BG I’m really bad about measuring things out but it was 1 cup of AP flour 1/8c of dizzy pig Peruvian-ish 1t of ghost pepper powder, sone salt and some fresh cracked pepper. These are a guess on measurements as I eyeball most things.
Wet mix was the same as above just mixed in 1 can of seltzer water with it. You could use beer or what ever else you have on hand.
Once coated in the dry mix went into the egg wash and then the wet. Let the excess drip off and then placed it on the swing rack in my XL egg runnning at about 400 indirect. I used some chery smoker bricxs form the Cleveland bourbon company.
Idk how long it took to get to the 195-200 degree range but I’m guessing maybe 40mins.
All and all it was really good and was something different for Norah Grace and I to cook.XL BGE, KJ classic, Joe Jr, UDS x2 -
