    Keep it relatively simple for a fest. I try to do stuff that people usually wouldn't make at home. Stuff off the wall. People seem to gravitate towards that kind of stuff.

    Not that crazy. Random stuff like glazed doughnut bacon burgers and PB&J Frosted Flakes French Toast

    Made a simple flank steak with Dizzy Pig Jamaican Firewalk rub this week.  Cant say it was necessarily the best, but it was sooo good.  Lots of flavor with a bite.

    Grilled fried chicken {wings}. 
    brisket
    pulled pork
    beer brats 
    spatchcocked chicken
    spatchcocked turkey
    steaks 
    burgers  (thick and smashburgers)
    hot dogs
    fish (porgy, salmon, swordfish) 
    bacon  (smoked on the Egg - new batch going on tomorrow)

    It's to the point where going out is really hard because we make it better at home.

    Alright, so I don’t have a recipe, but....

    at Eggtoberfest last year, as the event was winding down, the team from BGE Mexico was cooking next to Meat Church and I noticed a crowd gathering. 

    They had been roasting marrow bones and scraped the marrow onto cast iron and seared thin slices of ribeye in it.  Then they swished the steak around in what I think was a habenaro honey mustard.

     I got handed a piece of steak that looked like it was covered in snot. But it was Slammin’.  Literally the best bite of food I’ve ever had.

  • Cookies, sugar cone s’mores...anything sweet.  It’s crazy that dessert would trump bbq at a BBQ fest...but I can vouch.  The s’mores kept a line in front of our booth all day.  Won a MiniMax! 

    Also, do a variety of simple foods.  Maybe a day before cook, and reheat, like pulled pork.  Wings are fun, quick and easy.

    Regarding your questions, I would keep it simple and expect to serve many portions.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
