That's going to be a meal fit for a King not a prince. Have fun with the cook and enjoy the time with your family.

Any reason for breaking out the SRF is a great one.  Enjoy the cook and follow-on banquet with family.

Can't wait to see more pics! I've always wanted to do a SRF brisket but have never pulled the trigger. My wife thinks the price tag is too excessive  :|

@Scantron - I have no affiliation with SRF but their black grade briskets are definitely worth it if you enjoy a great brisket banquet.  Even if brisket is not high on your banquet list you owe it to yourself at least once.
Look for the infrequent 10-15% discounts and give one a go.  Price /lb is a whole lot more reasonable than many other cuts out there.  FWIW-

Agree totally. I bought this one, and another, when they did a buy one and 50% off the 2nd. Rare sale and I haven’t seen that kind of discount for a while. But when they do it, I jump — it goes from outrageously expensive NFW to very expensive WTFN.

I'm hoping for final photos before that brisket gets scarfed down!

  • Still full. Don’t have the fully sliced money shot bc was slicing and serving the flat and the point simultaneously.  This was the longest I’ve cooked an SRF brisket — 12 lbs took 17 hours to get to buttah in the flat and jiggly as hell, just shy of 200 degrees. Maybe could have used even a *bit* more time, but even tho the brisket drives the cook, SWMBO demanded (correctly) that the inlaws get fed.

Nailed it.  Great outcome right there.  You did the protein quite proud.

  • Have just a little bit left over . . . was running late for work so no brisket and eggs this morning, which is a total bummer.  Prob brisket nachos tonight.  I'm looking forward to that as much as I was to last night's dinner.  Maybe even more!
