    Afternoon chaps, Decided to do it over night @230f , started at 8pm got up at 4:30 to check,  egg had dropped to 150f with meat at  170f . so put it in the oven at at 230f and went back to bed till 6:30 , put it back in Egg which was now at 220f .Meat reached 195f at 12:30. Now snug as a bug in a rug FCT stylie.

  • If you increase the temp to 265-275f, you'll probably be good in 10 or so hours. There will be no difference over cooking at 225-230f. You can always bump the temp up to 325-350f after 8 hours or so if your stall period is lasting longer than expected. 
    Or you can go Turbo (300+) from the git go and that will usually avoid the stall.

  • I did 2 butts totaling 18 pounds in my XL yesterday. I wanted to try doing a turbo cook for the first time. I started at 350 degrees and after about an hour, reduced the temp to 320. They were at 202 degrees in about 6 hours. Great cook, I couldn't tell any difference in the ones that previously I had cooked at 230 degrees overnight, other than this time was a whole lot less stressful.
