I just use the grid.


I hate it when I go to the kitchen for food and all I find are ingredients!

This on a small foiled sheet pan, to keep it out of the liquid -

I humbly suggest this topic is often overthought. I'm all about simple cleaning, and maximum smoke touch.
Offering a little more support than just the grate is a piece of expanded metal. This is a much better solution than enclosing in a pan, imo. Also easier to clean than baskets etc. I've been using this for years with great results.

A few years ago I did a post on grid vs. a tray for meatloaf; I simply split the loaf into two, and did one half bare on the grid and the other half in a tray. As I expected, the bare half had better smoke flavor, better crust; the tray half was juicier.
I couldn't decide which one I liked better (a perfect meatloaf sammich would have a thin slice of each on it).

Me thinks the recipe you use is more revelant to the outcome than your choice of grid vs tray, basket or whatever. With my meatloaf recipe choice I use a "hen's egg and a cup of Parmesan herb Panko bread crumbs" both of which adds a great consistency to the ground chuck plus ingredients.Botch said:

The primary purpose is veggies, but this is what I use for meatloaf and it works well. Clean up is a snap.Stillwater, MN -

the grease browns potatoes, why get a screened pan to waste the grease


usually right on the grill like carolinaq, sometimes direct on the grill til brown an then tossed into a casserole dish with whole stewed tomatoes. some times i just want cold sandwiches and press it flat in a cookie sheet like brownies, more crust and makes a better sandwich. theres no best pan for meatloaf
then theres thin sliced deli meatloaf, no reason for me to follow recipes and just use one method, its just meatloaf
