Mad Max Deconstructed Turkey?

Max,[p]I was toying with the idea of deconstructing a turkey and roasting the rolled breast and legs. Any thoughts on how your method might translate. I a Mad Max last year and it was great. Just feeling a little contrary this year.[p]Thanks

    mine too. ...and as much as i love giaga, i'd trade her autograph for that one any day!! . .. [p]that is very cool. .. .[p]probably my favorite cooking show of all time was the one with her and jacques pepin on PBS . ..i loved the way they interacted and the way he would ofter defer to her. ..he always showed her great respect ... .the book they did together is also terrific, one of my favorites ...the way they both took the same food and would provide totally different preparations even for something simple like a hamburger (still one of my favorite episodes) or a roasted chicken. .. .[p]thanks for sharing that ...

    mad max beyond eggdome,[p]I've made her recipe for Deconstructed Turkey from Cooking at Home with Julia and Jacques several times, and I love it. I think the biggest difference is she's kind of proposing to solve the white meat/dark meat conundrum by cooking them separately then reassembling rather than by cooling the breast with ice ahead of time.[p]All good stuff. I also LOVE the cornbread and sage sausage stuffing recipe from that book, and make it every year.[p]Gobble gobble,

  • thirdeye,[p]Cool! I was telling Max offline earlier that I have an autographed copy of "the way to cook." And another one as well. Smithsonian Institute used to have cooking lectures, etc. and I saw there --what a hoot!
