Cooking @The_Buffalo Pt. 1: Hickory smoked buffalo chili with roasted tomatoes

Whilst in Yellowstone, we had some amazing smoked bison chili - lovely stuff. A richer, more intense flavour that beef chilis we'd had in the past. Upon returning home, I looked at making this in the Egg. Whilst bison is hard to come by in the UK, @The_Buffalo is available from a few places. Cooked OTT over hickory with the tomatoes roasting at the same time, it was excellent and a few notches up from standard chili.
Recipe in the link below, I took inspiration from Colorado Chili recipes I found online:
Plated and ready to serve, garnished with coriander:

Three balls of meat ready to cut up:

Chopped and going back into the sauce:
