Pre-Cook Ribs Day Before

Hi All,
Any thoughts on the following? I want to smoke my ribs the day before I serve them. On the day of, I want to remove them from the refrigerator and throw them back on direct adding sauce and charring them up a bit.
What are your best practices for this in terms of resting after the smoke before going into the refrigerator (to foil or not to foil), time at rest, etc?

Vac seal and ice bath when you pull them off, or on a rack in the kitchen or fridge to let them cool before wrapping them up.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

I just let cool to room temp, foiled, then fridge.
remove from fridge to room temp then on grill for 15-20 to baste and char a bit. -
If time is your issue, cook same day at 350º and they'll be done and outstanding in 1.5 - 2 hours.Packerland, Wisconsin

My little brother worked at a popular rib restaurant in San Antonio. Based on what he told me, almost all BBQ restaurant ribs are smoked in advance, refrigerated, and warmed up for serving.
